Cool Kid Cauliflower and Broccoli

Oh you haven’t heard? All the cool kids roast their vegetables. If you want to be cool you should do it too. Or if you just want to turn those tree-looking vitamin powerhouses into a drool worthy side dish in my case. I’m already cool. I prefer coconut oil for the extra dose of Omega 3 but if you’re scared use olive oil. But only if you’re scared. If you use coconut oil your broccoli won’t taste like a Pina Colada. I promise.

Ingredients:

broccoli/cauliflower

1 tbsp coconut oil(melted) or olive oil

sea salt and pepper to taste

1 tbsp herbs de provence

2 tbsp minced garlic

Directions:

Preheat oven to 375 degrees.

Cut up broccoli and cauliflower into florets and put on a baking sheet.

Drizzle with oil, and garlic. Season with salt, pepper and herbs.

Cover pan with foil and bake for 30 mins. Uncover, toss and cook for 30 more minutes.
