If there was one recipe I could force my non-vegetable loving friends to create it would be this one. I make this at least once a week and every time I take a bite I close my eyes in bliss. This is chinese heaven in a bowl minus the crap. Let’s do a comparison of cauliflower fried rice and regular fried rice and then I’ll show you how amazingly easy it is…
Cauliflower Fried Rice (1-3 servings)
(This calculation is for the WHOLE batch which is a HUGE serving, I usually make it into 3)

Have I convinced you yet? Let me show you how easy the recipe is and then maybe you’ll give in…
1/4 cup celery diced
1/4 cup carrots diced
1/4 cup onions diced
1/2 cup mushrooms diced
1 tablespoon coconut oil
Garlic seasoning
Melt 1 tablespoon coconut oil (or oil of your choice) in a skillet pan and throw all veg and soy sauce/seasoning in, let cook for 4-5 minutes (this is the largest pan I had, it is a TON of vegetables)
Move all veg to one side of the pan and scramble your two eggs into the other side of the pan. Combine everything together once eggs are cooked.
Throw in chicken and stir until well mixed, let cook another 4-5 minutes
And now the most important part…DEVOUR IT.
