1/2 pound bulk pork sausage/chicken/ground beef/bacon etc.
12 eggs
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 cup chopped mushrooms
1/2 cup chopped broccoli
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese (optional)
Directions
In a large skillet, cook meat over medium heat until no longer pink; drain.
In a large bowl, beat eggs. Add the onion, green pepper, salt, garlic powder and pepper. Stir in meat and cheese.
Spoon by 1/3 cupfuls into muffin cups coated with cooking spray. Bake at 350° for 20-25 minutes or until a knife inserted near the center comes out clean.
Yield: 12-18 muffins (depending on size)
These are great for breakfast on the run. Zip up 2-3 muffins in a bag and store in fridge for the week…You can also freeze them! P.S I’d like to give a shout-out to Pinterest for this recipe hehe…
